? 3 cups all purpose flour
? 2 sticks unsalted butter
? Half cup ice- cold water
Rub the butter into flour until small pieces remain, add ice water then make into a dough just able to hold together. Refrigerate the dough until ready to use.
Filling:
? 3 pounds apples (Golden Delicious or Gala apples)
? Half stick of butter
? 5 tablespoons of sugar
? Squeeze half of lemon
? 1 cinnamon stick
? 1 vanilla bean
? 1 teaspoon Ginger power or one splice of ginger
Peel and cored the apple and cut into wedges, cook with the ingredient for 15 minutes, be careful not to over- cook. Cool before use. Cut the pie dough into 2 pieces, and roll it into the diameter of the pan you are using. Lie the pie dough at the bottom of the pan, add the cooled filling without the liquid. Cover with the other piece of the dough, brush the top with egg wash and sprinkle with sugar. Bake 375 for about 1 hour, the crust should be deep golden brown color. Let it cool before cutting.
